• 1 medium onion, chopped

Preheat oven to 375°F (190°C) and grease a baking dish. In a skillet over medium heat, cook ground beef and onion until browned; drain excess fat and season with salt and pepper. In a bowl, whisk together soup, milk, and sour cream until smooth. Layer half of the sliced potatoes in the baking dish, top with half of the beef mixture, then spread half of the sauce over top.
