Ingredients

•1 lb (450 g) ground chicken
•½ cup breadcrumbs (plain or panko)
•1 large egg
•½ cup finely chopped celery

•2 tablespoons all-purpose flour
•1½ cups chicken broth
•½ cup heavy cream (or half-and-half)

Method

1.Prepare the Meatball Mixture
In a large bowl, combine the ground chicken, breadcrumbs, egg, celery, onion, garlic, salt, pepper, paprika, and herbs. Mix gently until just combined—avoid overmixing to keep the meatballs tender.
2.Shape the Meatballs
Using slightly damp hands, roll the mixture into evenly sized meatballs, about 1½ inches in diameter. Set them aside on a plate.
3.Cook the Meatballs
Heat olive oil in a large skillet over medium heat. Add the meatballs in a single layer, cooking in batches if necessary. Brown them on all sides for about 6–8 minutes, until golden and cooked through. Remove the meatballs from the skillet and set aside.
4.Make the Creamy Gravy
In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to remove the raw flour taste. Gradually whisk in the chicken broth, stirring constantly until smooth and slightly thickened.
5.Finish the Sauce
Stir in the cream and season with salt and pepper. Let the gravy simmer gently for 2–3 minutes until rich and creamy.
6.Combine and Simmer
Return the meatballs to the skillet, spooning the gravy over them. Simmer for an additional 5 minutes so the flavors meld and the meatballs absorb the sauce.
