Ingredients

For the Pasta:
•10 oz (280 g) pasta (penne, rotini, bowtie, or your favorite)
•Salt, for boiling water
For the Chicken and Bacon:
•2 boneless, skinless chicken breasts
•6 strips bacon
•1 teaspoon garlic powder
•1 teaspoon paprika
•Salt and black pepper, to taste
•1 tablespoon olive oil
For the Ranch Cheddar Sauce:
•2 tablespoons butter
•3 cloves garlic, minced
•2 tablespoons all-purpose flour
•2 cups heavy cream or half-and-half
•1 cup chicken broth
•1 packet ranch seasoning mix
•1 ½ cups shredded cheddar cheese
•½ cup grated Parmesan cheese (optional but recommended)
•Fresh parsley, for garnish

Instructions

1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve ½ cup of pasta water, then drain and set the pasta aside. Keeping the pasta slightly firm ensures it holds its shape once coated in the rich sauce.
2. Prepare the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove it and place it on paper towels to drain excess grease. Once cooled, chop the bacon into bite-sized pieces. Leave about 1 tablespoon of bacon fat in the skillet—this will enhance the flavor of the chicken and the sauce.
3. Season and Cook the Chicken
Season both sides of the chicken breasts with garlic powder, paprika, salt, and pepper. Add olive oil to the skillet along with the bacon fat and heat over medium-high. Cook the chicken for 5–7 minutes per side, or until golden brown and fully cooked through. Remove from the heat and allow it to rest for a few minutes before slicing it into strips or cubes.
4. Make the Creamy Ranch Cheddar Sauce
Using the same skillet, melt the butter and add the minced garlic. Sauté for about 30 seconds until fragrant. Sprinkle in the flour to create a roux, whisking constantly to prevent lumps. Slowly pour in the heavy cream and chicken broth, whisking as the mixture thickens. Stir in the ranch seasoning until well combined.
Reduce the heat and add the shredded cheddar and Parmesan cheeses. Mix until the sauce becomes smooth, creamy, and fully melted. If it appears too thick, add a splash of the reserved pasta water to reach your desired consistency.
5. Combine All Components
Add the cooked pasta to the skillet and gently toss it to coat every piece with the creamy sauce. Fold in the sliced chicken and half of the crispy bacon, mixing until well incorporated. Allow everything to heat together for 1–2 minutes.
6. Serve
Transfer the pasta to serving bowls. Top with the remaining bacon, a sprinkle of parsley, and an optional dusting of Parmesan for a beautifully finished dish.
