Pineapple Cream Cheese Cake

Ingredients

For the Cake:
•1 box yellow cake mix
•3 large eggs
•1 cup crushed pineapple (with juice)
•½ cup vegetable oil
•1 tsp vanilla extract
For the Cream Cheese Layer:
•8 oz (225 g) cream cheese, softened
•1 cup granulated sugar
•2 tbsp cornstarch
•1 large egg
•1 tsp vanilla extract
For the Top:
•Pineapple rings or slices
•2 tbsp sugar (optional for caramelizing)

 

Instructions

1. Prepare the Cake Batter
1.Preheat oven to 350°F (175°C).
2.Grease a rectangular baking dish.
3.In a large bowl, mix:
•yellow cake mix
•eggs
•crushed pineapple with its juice
•oil
•vanilla
4.Whisk until smooth and well combined.
2. Make the Cream Cheese Filling
1.In another bowl, beat the cream cheese until creamy.
2.Add sugar and cornstarch, beat until smooth.
3.Add the egg and vanilla; mix again until silky.
3. Assemble
1.Pour half of the cake batter into the baking dish.
2.Gently spread the cream cheese mixture in the center, creating a thick stripe (as seen in the image).
3.Pour the rest of the cake batter around the edges while keeping the cream cheese stripe visible.
4.Arrange pineapple slices neatly on top.
5.Sprinkle with a bit of sugar for a golden finish (optional).
4. Bake
•Bake for 40–50 minutes, or until the cake is golden and set.
•Cool completely before slicing so the cream cheese layer firms up beautifully.

 

Serving Suggestion
Serve chilled or slightly cold. The pineapple keeps it juicy, and the creamy center melts perfectly with each bite.
