You’ve never tasted anything more delicious! The filling is amazing! I prepare a lot at once and keep it in the fridge for breakfast and snack.

Ingredients for the filling:

  • ricotta – 700 g;
  • raisins – 100 g;
  • cranberries – 100 g;
  • eggs – 2 pieces;
  • vanilla sugar – 10 g;
  • salt – a pinch;
  • zest of 1 lemon;
  • sugar – 3 tablespoons

Preparation of the Odessa listniks:

Break the eggs into a bowl, add salt and sugar and stir until the sand has melted. Pour 400 ml of milk and stir again.

Mix the flour and cornstarch, sift the dry ingredients into the egg and milk mixture and knead. Pour the remaining milk into the dough and mix all the ingredients.

Add vegetable oil to the dough.

If the dough is thick, add water and mix.

Heat a pan well, grease it with a drizzle of vegetable oil and fry the pancakes as usual for 30 seconds on each side.

For the filling: pour boiling water over the raisins and cranberries and let stand for 10 minutes. In the meantime, add the yolks to the ricotta, separating them from the whites.

Pour the vanilla and sugar into the ricotta and beat with a blender until creamy. Add salt to the egg whites and beat until fluffy.

Gently fold the egg whites into the ricotta mixture and stir. Drain the cranberries and raisins on a paper towel. Pour the raisins, cranberries and lemon zest into the cottage cheese mixture and mix.
