In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if needed.

Add the diced onion and cook for 3–4 minutes until soft and fragrant.

Stir in mustard, salt, black pepper, and garlic powder. Mix well.

Add the cooked rice and diced tomatoes, stirring until everything is well combined.

Sprinkle shredded cheddar cheese evenly over the top. Cover and let it melt for 2–3 minutes.
