Cheesy Skillet Zucchini Rounds

Ingredients:

2–3 medium zucchini

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

 

Instructions:

1. Prepare the zucchini:

Wash the zucchini and slice into 1/4-inch thick rounds.

Sprinkle both sides lightly with salt and pepper.

2. Cook the zucchini:

Heat olive oil in a large skillet over medium heat.

Add zucchini slices in a single layer.

Cook for 2–3 minutes per side, or until golden brown and tender.

(Work in batches if needed.)

3. Add the cheese:

Reduce heat to low.

Sprinkle mozzarella and Parmesan evenly over the zucchini slices.

Cover the skillet and cook for 1–2 minutes, until cheese is melted and bubbly.

4. Serve:

Transfer cheesy zucchini rounds to a serving platter.

Garnish with chopped fresh parsley.

Serve immediately.

Tip: This makes a perfect side dish or a quick snack. Feel free to add crushed red pepper flakes or garlic powder for an extra flavor boost.
