Method
1.Prepare the Crust
In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Gradually add cold milk, mixing just until the dough comes together. Divide the dough into two equal portions, shape into discs, wrap, and refrigerate for 30 minutes.
2.Make the Apple Filling
In another bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss well until the apples are evenly coated. Set aside to allow the flavors to meld.
3.Assemble the Slices
