Crockpot Broccoli and Cheddar Soup

This creamy, comforting Crockpot Broccoli and Cheddar Soup from deesviral is rich, cheesy, and unbelievably easy — just dump, slow-cook, and enjoy.

Ingredients:

• 4 cups fresh broccoli florets, chopped
• 1 small onion, diced
• 2 cloves garlic, minced
• 3 cups chicken broth
• 2 cups heavy cream (or half-and-half)
• 2 cups shredded sharp cheddar cheese
• 4 oz cream cheese, cubed
• 2 tbsp unsalted butter
• 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
• Salt and black pepper, to taste

Directions:

Add broccoli, onion, garlic, broth, butter, and cream cheese to the crockpot. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until broccoli is very tender. Use an immersion blender to blend to desired consistency, or mash slightly for a chunky texture. Stir in cheddar cheese until melted and smooth. If thicker soup is desired, stir in the cornstarch slurry and cook an additional 10–15 minutes. Season with salt and pepper to taste.
