There’s something about a warm, cheesy dip bubbling away in the slow cooker that takes me right back to church potlucks and Friday night card games in small-town Midwest halls. This 4-ingredient sausage cheese dip is one of those recipes that has quietly made the rounds for decades—handwritten on index cards, tucked into church cookbooks, and passed from one busy home cook to another. It’s hearty, unfussy, and exactly the kind of thing you set out when the weather turns cold or the big game is on. Using simple ground pork sausage and pantry-friendly ingredients, this dip just about makes itself while you go about your day. You’ll want to make it when you need something dependable and crowd-pleasing that tastes like it came straight out of a neighbor’s farmhouse kitchen.
This sausage cheese dip is happiest surrounded by a big platter of sturdy dippers. Serve it with tortilla chips, corn chips, or thick-cut potato chips so they can stand up to the hearty sausage. Sliced baguette or a rustic country bread, lightly toasted, is lovely for a more old-fashioned spread. Fresh vegetables like celery sticks, carrot sticks, bell pepper strips, and cucumber rounds add a nice crunch and a bit of relief from the richness. If you’re feeding a hungry crowd, you can also spoon the dip over baked potatoes, pile it onto cooked pasta for a quick makeshift casserole, or ladle it into warm soft tortillas for easy little hand-held snacks.
4-Ingredient Slow Cooker Sausage Cheese Dip
Ingredients
1 pound ground pork sausage (mild or spicy, according to your taste)
1 (16-ounce) block processed cheese, cut into cubes (such as Velveeta)
1 (10-ounce) can diced tomatoes with green chiles, undrained
1 (8-ounce) package cream cheese, cut into cubes
1 (16-ounce) block processed cheese, cut into cubes (such as Velveeta)
1 (10-ounce) can diced tomatoes with green chiles, undrained
1 (8-ounce) package cream cheese, cut into cubes
Directions
In a large skillet over medium heat, cook the ground pork sausage, breaking it up with a spoon, until it is browned and fully cooked through. Drain off any excess grease.
Lightly spray the inside of your slow cooker with nonstick cooking spray for easier cleanup.
Add the browned sausage to the slow cooker. Top with the cubed processed cheese, cubed cream cheese, and the entire can of diced tomatoes with green chiles (do not drain).
Cover and cook on LOW for 2–3 hours, or on HIGH for about 1–1½ hours, stirring occasionally, until all the cheeses are melted and the mixture is smooth and creamy.
Once everything is melted, stir well to fully combine the sausage and cheeses. Taste and adjust seasoning if you like, adding a pinch of salt or black pepper to suit your preference.
Turn the slow cooker to WARM for serving, stirring now and then to keep the dip smooth. Serve straight from the slow cooker with your favorite chips, bread, or vegetables.
Variations & Tips
To nudge the flavor in different directions, you can easily play with this basic formula without losing its simple charm. For a spicier version, use hot pork sausage and a can of extra-hot diced tomatoes with chiles, and stir in a pinch of crushed red pepper. If you prefer things milder, choose mild sausage and regular diced tomatoes, and you can even add a splash of milk to soften the flavor and texture. A handful of shredded cheddar or pepper jack stirred in at the end will give the dip a little more body and a homemade touch. If you’re trying to stretch the dip for a larger crowd, stir in a drained can of black beans or a cup of thawed corn kernels—both are very at home in this mixture. You can also swap the canned tomatoes with chiles for plain diced tomatoes and a small can of chopped green chiles if that’s what you have in the pantry. For easier serving at parties, keep the dip on WARM and give it a good stir every 20–30 minutes so it doesn’t scorch around the edges, and set out a ladle so folks can spoon it into small bowls or over baked potatoes for a heartier option.
