Slow Cooker Cowboy Casserole

Ingredients

•1 ½ lbs ground beef
•4–5 medium potatoes, peeled and diced
•1 small onion, finely chopped
•1 can (15 oz) kidney beans or pinto beans, drained and rinsed
•1 can (14.5 oz) diced tomatoes, with juice
•1 cup corn kernels (fresh, frozen, or canned)
•2 cups shredded cheddar cheese
•1 cup beef broth
•2 cloves garlic, minced
•1 teaspoon paprika
•1 teaspoon chili powder
•½ teaspoon ground cumin
•Salt and black pepper to taste
•Optional garnish: chopped parsley or green onions

Instructions

1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and set aside.
2. Lightly grease the inside of your slow cooker.
3. Add the diced potatoes to the bottom of the slow cooker, spreading them evenly.
4. Layer the cooked ground beef over the potatoes.
5. Add the chopped onion, garlic, beans, corn, and diced tomatoes.
6. Pour in the beef broth and season with paprika, chili powder, cumin, salt, and pepper.
7. Gently stir to combine all ingredients without breaking up the potatoes too much.
8. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender.
9. About 20–30 minutes before serving, sprinkle the shredded cheddar cheese evenly over the top. Cover again until the cheese is fully melted.
10. Garnish with parsley or green onions if desired, and serve hot.
