Ingredients:
2 cups cherry tomatoes, halved (use mixed colors for variety)
1 cucumber, sliced into half-moons
1/2 red onion, thinly sliced
1 cup Kalamata olives
170 g feta cheese, cubed or crumbled
1/4 cup fresh parsley, chopped (optional)
For the Dressing:
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
1/2 tsp garlic powder (or 1 clove garlic, minced)
Salt and black pepper, to taste
Instructions:
Prepare the Salad:
In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, and feta cheese.
Make the Dressing:
